1) What is the difference in quality between 2 honeys ?
All the honeys presented are of optimum quality and are always 100% pure and natural. Their taste depends on the flower or flowers from which the pollen and nectar were gathered. Monofloral honeys (acacia, orange blossom, clover, etc.) are more expensive because they are less common than polyfloral (or wildflower) honeys (thousand-flower, mixed-flower, etc.).
The colour of the product in the container is the colour of the honey. Nothing can be removed from or added to the honey.
2) Why is honey either clear or set? Do you add something to it ?
According to the flower from which the pollen and nectar were gathered, the honey will set more or less quickly. Some honeys, such as mountain honey, crystallise as soon as they are taken out of the hive. Others, such as acacia honey, will always stay clear.
3) How long does honey keep for ?
The date marked on the containers is an indication of freshness: honey can be kept for several years without ever becoming unfit for consumption but, over time, it can lose some of its aromas and taste characteristics.
4) Why has my clear honey got crystals in it? Can I still eat it ?
According to the flower from which the pollen and nectar were gathered, the honey will set more or less quickly. Some honeys, such as mountain honey, crystallise as soon as they are taken out of the hive. Clear honeys will always crystallise more or less quickly over time. This is because the most important natural components in honey are glucose and fructose. Honeys with a high glucose content will crystallise more quickly than honeys in which there is a greater quantity of fructose.
Therefore, clear honey containing crystals is still good for your health. If you want to make it less crystallised, you can place it near a heat source such as an oven or a radiator.
5) Does honey contain fewer calories than sugar ?
Yes, honey contains much fewer calories than sugar. For one thing, it is predominantly made up of fructose and glucose (natural sugars) whereas sugar is made up of saccharose. In addition, honey has a greater sweetening capacity than sugar, which allows you to sweeten your tea, herbal tea and yoghurt with a smaller quantity of honey than sugar.
6) I bought the same honey twice, but they don’t have the same taste ?
Honey is a 100% PURE AND NATURAL product. We try to maintain a consistent taste, but certain honey flows can vary with the collections according to the climatic conditions, and therefore have sweeter or more typical characteristics. Honeys have a wide variety of tastes and colours with each plant bringing different overtones.
7) Why are some honeys sweeter than others ?
There is a honey to suit all tastes because the spectrum of honeys includes all the flavours of nature. Certain honeys will have a sweeter taste than others because the flowers from which the pollen and nectar were gathered are not the same. Honeys are less sweet because their bitterness is more intense and the sweetness is therefore felt less.
There are 2 sorts of honey: nectar honeys, which come from flowers, and honeydew honeys, which come from secretions that exude from trees. Honeydew is a sweet substance that bees collect from trees (e.g. fir-tree honey, etc.).
